Peanut (Flour) Butter Cream

Well, the Queen of all things Non-Dairy, inspired this “recipe.”  I first came across her coconut cream on HEAB’S blog but I’m pretty much the last person on the planet in the blog world to still have not tried coconut flour (a necessary ingredient for coconut cream).

I do, however, have a large hoarded pile bag of peanut flour from TJ’s so I took 2 Tbsp pb flour, 3-4 Tbsp water, & 1/4 tsp vanilla.  Mix, mix, mix & then INSPIRATION!

I knew I had a large hoarded stash couple of Deep Chocolate Vitatop in the freezer & I figured warm pb & cold Vitatop would be awesome!

I was right! 🙂  I cut the Vitatop in 1/2 and left it frozen.  Then I nuked the pb/water mixture for about 1 minute and it got all warm and actually increased in volume.

Don’t let the mixture microwave for too long or you will be cleaning pb flour off the microwave and scraping pb flour crust off your cup.

Not that I did that …

Anyhoo, after that’s all taken care of and a mess is averted (or cleaned up, in my case).  Take the pb cream, spread it between the two halves of chocolatey Vitatop love & sprinkle (or douse) with cinnamon.

There you have it – warm pb luvin!

    • i keep seeing coconut flour at the store and then am reminded of all the flours i have in my pantry sitting, unsused!

  3. Oh gosh, that sounds good. I haven’t had a Vitatop in forever. Used to love the brownies, but stopped buying them when we started cutting back on our grocery budget. Miss them, and I wonder why TJ’s stopped selling its peanut flour? It seemed like a really popular item…or is my mind just warped by food blogs? 😉

    • haha – i often think my mind’s warped by food blogs, too! i wonder what proportion of the world actually eats this much oatmeal or sweet potatoes? 🙂
      seriously, someone at tj’s needs a reality check – that pb flour is amazing & i’m dreading the day i have to order pb2 from amazon!

    • oh, but tj’s has betrayed us & discontinued peanut flour so i’ll have to order it online like the rest of the world! 😦 tj’s is great, though, they make healthy eating so convenient!
