Mocha Chocolate Protein Muffins

 

56 Cal, 5 g Carbs, 0 g Fat, 10 g Protein

Well isn’t that the cutest little muffin you ever laid eyes on!  … Okay, well, maybe not but it is tasty!

1 scoop (28.4 g) About Time Mocha Mint Protein Powder 

1 scoop (28.4 g) About Time Chocolate Protein Powder

1 cup wheat bran

1 tsp baking powder

1 cup egg whites

1/2 cup pumpkin puree

4 oz nonfat, plain greek yogurt

1 tsp vanilla

  1. mix dry
  2. add wet
  3. dust flour on your face and pretend like you’re actually working hard in the kitchen
  4. dig egg shells out of mix
  5. bake in oven at 375 for 25 minutes or until toothpick comes out clean
  6. enjoy
  7. or don’t. more for me

They didn’t really taste like mint, more like chocolate (which is just fine with me).  What I can say, though, is that this protein powder bakes up extremely well!  The muffins were definitely not rubbery or dry!
