1 cup egg whites
1/2 cup pumpkin puree
4 oz nonfat, plain greek yogurt

bake in oven at 375 for 25 minutes or until toothpick comes out clean

They didn’t really taste like mint, more like chocolate (which is just fine with me). What I can say, though, is that this protein powder bakes up extremely well! The muffins were definitely not rubbery or dry!
