cheezy, cheezy, nice & easy

This post could also be titled:

“How to make your dining companions as orange and gassy as you are.”

As part of my job, I teach middle school students how to cook and eat healthier.  This involves introducing them to new fruits, vegetables, and cooking techniques but I also like to lighten up some of their favorite foods.  The lesson this recipe came from was based on nutrition label literacy and was an effort to show them how to boost nutrition without sacrificing taste.

Plus, have you ever seen a mac and cheese label?  Look at this ingredient list!

Ingredients: ENRICHED MACARONI PRODUCT (WHEAT FLOUR, NIACIN, FERROUS SULFATE [IRON], THIAMIN MONONITRATE [VITAMIN B1], RIBOFLAVIN [VITAMIN B2], FOLIC ACID); CHEESE SAUCE MIX (WHEY, MILKFAT, MILK PROTEIN CONCENTRATE, SALT, SODIUM TRIPOLYPHOSPHATE, CONTAINS LESS THAN 2% OF CITRIC ACID, LACTIC ACID, SODIUM PHOSPHATE, CALCIUM PHOSPHATE, YELLOW 5, YELLOW 6, ENZYMES, CHEESE CULTURE). CONTAINS: WHEAT, MILK.

Here’s a version of mac and cheese sauce (plenty of cheesy taste, light on the sodium tripolyphosphate and Yellow 5 & 6.

Step 1:  Puree 1/2 cup of garbanzo beans

Step 2:  Heat 1 cup of nonfat milk & add in bean puree

Step 3:  Add in 1 1/2 cups shredded reduced-fat cheddar cheese & 1/2 cup pumpkin puree

Step 4:  Cook until cheese is melted and the sauce begins to thicken (about 5 minutes) Stir in 1/4 tsp paprika, 1/4 tsp black pepper, and 1/2 tsp garlic salt.

Step 5:  Forget to take pictures as cheese sauce is cooking

Step 6:  Pour over nachos, macaroni, or anything else your little hear desires.

Just not anything I’m eating because I hate cheese.

  1. I hate cheese too! But i am kinda tempted to try this because I’m already orange AND gassy, so I wouldn’t risk losing anything haha 😉
    and sidenote– that label for the mac and cheese is just plain grodee!

    • i’m sure it would work with non-dairy milk! i was making it for kids used to “regular” mac & cheese, so i wanted it to taste as authentic as possible. i also (weirdly) think it’d be good with tahini or pb drizzle on top of a baked potato. yikes!

  2. Yum – what a great idea – i like i like. You have a fun job too, I would love to do something like that! I’m orange cos I eat too many carrots. I only get gassy when I eat raw cabbage – go figure.

    • i get soooo gassy when i eat raw cabbage … and broccoli … and basically everything else i love! :) my mom said she turned orange from eating too many carrots: like mother, like daughter!
