Paleo-ish Protein Brownies

Hey friends, just had to share these awesome bars I made from Alexandra’s Brawny Brownie recipe!


I made a 1/2 batch and baked them at 350F for about 15 minutes.  Dee-licious!

  • 6 Tbsp Coconut Flour
  • 2 scoops (33 g each) chocolate whey protein powder
  • 3/4 tsp baking powder
  • 1 cup pumpkin puree
  • 2 eggs
  1. Sift dry ingredients together
  2. Mix wet ingredients together
  3. Mix wet into dry and place in a greased 8×8 baking dish
  4. Bake for 10-15 minutes until a toothpick comes out clean
  5. Cut into 6 bars




Clean Eats and Work Treats

Amanda’s Eat Clean 30 Challenge is going great so far!

CleanEatingChallenge5 (1)I’ve been doing clean-eating extreme by following a Paleo and Sugar-free diet.  Really, though, it hasn’t been hard at all.  Especially with tons of great food options like these.  I feel great so far and I’m looking forward to the rest of the month!

I’ve got to work a catering shift during dinner tomorrow and won’t be able to stop and eat so I thought I’d make something to hold me over.

In the mix I stirred up 1/2 cup coconut flakes, 1/2 cup of egg whites, and 1/2 Tbsp of coconut oil (that’s a lot of 1/2’s!).  I baked it at 350 for about 1/2 an hour (seeing a trend).

Yup, I ate 1/2 as soon as it came out of the oven.  Smile  I’ll be making this again tomorrow so I actually have something to eat during my shift.

I also made up some non-paleo (full of sugar) treats for a work potluck. 


I based them off of Averie’s recipe for Creamy Mixed Berry White Chocolate Crumble Bars but used raspberries and apple for the fruit and dark chocolate chips instead of white. 


My coworkers loved them and they were definitely easy to assemble!

Next potluck I’m going to bring a savory Paleo dish so that I can partake in the fun!

Warning – I’ll be stalking your recipe pages to find some new ideas!

Also, does anyone have ideas for Paleo snacks?  I’m trying not to OD on nuts due to Omega 6 content but I’m running out of ideas – there’s only so many veggies in coconut oil a girl can eat.  Sike, I can eat coconut oil for days, I just need grab-n-go options. Smile

You see, I’ve put myself on a Blogging Break … a timeout, so to speak.

I have been less than thrilled with the grades I’m getting in my summer school classes (imagine that, taking 3 accelerated classes + working + moving = subpar performances in all categories). 

So, I’ve mandated a blogging break (with one or two posts if there’s something awesome I have to share … like a giveaway hint hint!) until summer school is over in August. 

I’ll still be reading your blogs but comments will be fewer (I know you’ll miss my sarcastic wit Winking smile ).

WIAW Freezer Scrapings

I’ve gushed about Fridge Scrapings before and this is the same idea.  It’s what you do when you’re taking care of a bf who is recovering from hernia surgery while working and taking 3 accelerated summer classes.  You scrape that freezer clean in lieu of going to the store.

Surprisingly, for the small size of my freezers, they held a lot I had forgotten about!

My version of shepard’s pie – defrosted (previously cooked sweet potato) with frozen (previously cooked) meat and veg that thawed & warmed up during baking time.


Nana’s cookies!  I won these in a Sarah’s giveaway, took pictures, stored them in the freezer, and then shamefully forgot to write a thank you post!  My own nana would not be pleased!

What I’ve been consuming in massive amounts:


My High-Protein Chocolate Cookie based on Stuft Mama’s recipe.  I filled it with my chocolate protein butter (1/2 Tbsp coconut oil + 1/2 scoop Jay Robb Chocolate Whey Protein Powder)

Copy cat Popcorn Snacking Balls


I’ve already expressed my eternal blog crush on Lou before but I feel the need to reiterate my adoration for this “fridge scraper.”  This woman never ceases to amaze me with her ingenuity and inventiveness in the kitchen!

She JUST posted an energy ball recipe that included popcorn!  Usually I “pin” recipes and then forget about them (darn you all for flooding my Reader with so many awesome looking food).  However, I couldn’t wait to make these – especially since J is currently recovering from a hernia surgery and he needs all the good nutrition he can get!

I changed the recipe a little bit to make it more savory – they taste like a cross between cheese & caramel popcorn!

Caramel Cheese Popcorn Energy Balls

  • 2 T nut butter (I made my own pistachio nut butter) (healthy fats!)

  • 3 cups popcorn (I used microwaved light butter) (whole grains!)


  • 10 dates (fiber!)


  • 2 teaspoons Nutritional Yeast (gotta get in those B vitamins!)


  • 1 teaspoon Apple Cider Vinegar (healthy probiotics!)


  1. Whiz up all the ingredients in a food processor


2. Roll those babies up!

Chocolate Protein Brownie

What should you do with some Chocolate Protein FrostingEat it with a spoon out of a bowl. Slather it on a Chocolate Protein Brownie!



I baked it at 350 for about 15 minutes.  You could probably also microwave it if you want to save energy … but I hate energy and I like to waste it.


Does it taste like brownie?  Well, I doubt a 5 year old would choose this over Duncan Hines, but it’s square and chocolate and it does the trick!  And 5 year olds are dumb anyway, let’s not base our choices on their preferences.
