Paleo-ish Protein Brownies

Hey friends, just had to share these awesome bars I made from Alexandra’s Brawny Brownie recipe!


I made a 1/2 batch and baked them at 350F for about 15 minutes.  Dee-licious!

  • 6 Tbsp Coconut Flour
  • 2 scoops (33 g each) chocolate whey protein powder
  • 3/4 tsp baking powder
  • 1 cup pumpkin puree
  • 2 eggs
  1. Sift dry ingredients together
  2. Mix wet ingredients together
  3. Mix wet into dry and place in a greased 8×8 baking dish
  4. Bake for 10-15 minutes until a toothpick comes out clean
  5. Cut into 6 bars

As I’ve spoken about previously, my whole diet has changed (for the better) and coconut oil has a lot to do with it.

During my eating disorder I subsisted on mountains of low-calorie vegetables.  During my recovery I had to learn how to eat for nourishment … a journey I’m still in the process of.  I still found myself restricting fats, though.  Within the last few months I transitioned into a Paleo-style diet with a carb-cycling approach to low-carb, high-fat, moderate-protein.

The only problem?  I don’t like many foods that are naturally high in fat and I don’t want to rely on nuts due to their high Omega-6 contents.

So what swooped in and saved me like a superhero?  Coconut oil.

I used lesser quality coconut oils until I tried the good stuff.  The former oils quickly found themselves banned from my kitchen and are now being used for natural skin lotions and hair deep-conditioning.

So what’s the good stuff?

WIAW Paleohmygoodness

This challenge has been so easy!  I seriously think back on my day to find where I’m going wrong because eating Paleo has been so effortless it seems like I must be doing something wrong!

Have I grossed you out too much with all the organ meats and animal bits and pieces?  I hope not, because I truly believe that eating the whole animal is the most respectful way to eat meat.  Heck, if you can handle eating a breast, you should be able to eat the organs!

Clean Eats and Work Treats

Amanda’s Eat Clean 30 Challenge is going great so far!

CleanEatingChallenge5 (1)I’ve been doing clean-eating extreme by following a Paleo and Sugar-free diet.  Really, though, it hasn’t been hard at all.  Especially with tons of great food options like these.  I feel great so far and I’m looking forward to the rest of the month!

I’ve got to work a catering shift during dinner tomorrow and won’t be able to stop and eat so I thought I’d make something to hold me over.

In the mix I stirred up 1/2 cup coconut flakes, 1/2 cup of egg whites, and 1/2 Tbsp of coconut oil (that’s a lot of 1/2’s!).  I baked it at 350 for about 1/2 an hour (seeing a trend).

Yup, I ate 1/2 as soon as it came out of the oven.  Smile  I’ll be making this again tomorrow so I actually have something to eat during my shift.

I also made up some non-paleo (full of sugar) treats for a work potluck. 


I based them off of Averie’s recipe for Creamy Mixed Berry White Chocolate Crumble Bars but used raspberries and apple for the fruit and dark chocolate chips instead of white. 


My coworkers loved them and they were definitely easy to assemble!

Next potluck I’m going to bring a savory Paleo dish so that I can partake in the fun!

Warning – I’ll be stalking your recipe pages to find some new ideas!

Also, does anyone have ideas for Paleo snacks?  I’m trying not to OD on nuts due to Omega 6 content but I’m running out of ideas – there’s only so many veggies in coconut oil a girl can eat.  Sike, I can eat coconut oil for days, I just need grab-n-go options. Smile

August Clean Eating

Just a quick pop-in post to announce that I’ll be participating in Amanda’s August Clean Eating Challenge!

Yeah, yeah, yeah, I know that so many people hate that term “clean eating.”  Bite me and my clean food.

I’m using this challenge as an excuse to get off my Splenda-eating behind and go Paleo for a month.

You see, I’ve transitioned into Paleo eating as I’ve gone more and more low-carb.  I started out by eating way more fat than I ever did (up to 40-50% of my daily calories) and then I started listening to Paleo podcasts and loving the messages they were sending.  It’s about quality and caring for your body enough to pay attention to what you’re putting into it.  It’s not about weight!!!  In fact, it’s about releasing that number and reframing my paradigm of what’s important (from a Balanced Bites podcast)

  1. How do I feel?
  2. How is my training?
  3. (many more questions)
  4. How do I look?

However, I haven’t been able to fully kick my artificial sweetener habit and I’m not comfortable with the amount I’m leaning on that stevia, etc. to get me to drink water (Crystal light junkie) and I’m pretty sure it’s affecting my raging sweet tooth.

So, for August, I’m Paleo and sugar-free. 

Time to go make some bone broth.

I’m about to become a bigger hippy than I already am.
